Post Harvest Losses: Ghanaian farmer introduces innovative way to stop tomatoes from going waste
Tomato is a troublesome crop because it’s highly perishable.
The crop has an inherently short shelf life as it could perish within a week when it’s ripped for consumption.
Tomato farmers in Ghana often cry about post harvest loses in the peak season as they harvest more than it’s consumed.
In the peak season, good number of tomatoes go waste, perishing, all because it wasn’t sold on time.
Ghanaian farmer Alex Asante Yeboah has introduced a simple but innovative way to stop the post harvest loses in tomato farming.
In a Facebook post, he explained how tomato could be dried like how pepper is dried.
The dried tomato, just like pepper is still useful for cooking, for home and commercial food vendors.
Below is how he explained how the drying of tomato could be done.

I have found a solution to their problem.
Its simple by drying all left over tomatoes.
This can be sold to any restaurant or the chop bar for their food if buyers prefer fresh ones.
Using Dry-Packed Tomatoes
This is a pretty simple process:
Just let them soak in warm water for 30 minutes until soft and pliable, drain (reserve the liquid to add flavor to stocks and sauces), pat dry, and use as directed in your recipe.
You can also use wine, broth, or other cook.
If you go to the market and find dried tomatoes know that it’s also edible.
Its as good as died pepper.

How do you dry fresh tomatoes?
Instructions
Heat oven to 250°F. Line a large baking sheet with parchment paper.
Slice the tomatoes in half lengthwise. Place them cut-side-up on the baking sheet.
Bake for 2.5 to 3.5 hours, or until the tomatoes are dried out, keeping an eye on the tomatoes so that they don’t burn.
Remove from the oven.
